- ORANGE-ALMOND CAKE {Torta de Almendra}

- INGREDIENTS:

- 1. 11/4 cups all-purpose flour or 11/2 cups cake flour.

- 2. 1 cup sugar.

- 3. 11/2 teaspoons baking powder.

- 4. 1/2 teaspoon salt.

- 5. Juice of three fresh oranges + milk to = 3/4 cup.

- 6. 1/3 cup shortening.

- 7. 1 egg.

- 8. 2 heaping teaspoons grated orange peel.

- 9. 1/4 cup sliced almonds.

- 10. 1 teaspoon sugar.

- 11. 1 tablespoon almond extract.

- INSTRUCTIONS: Heat oven to 350^F.Grease and flour round 9 inch spring form pan.Beat
- all ingredients except almonds and the sugar-cinnamon mix in a large mixer bowl on low
- speed,scraping bowl constantly,30 seconds.Beat on high speed,scraping bowl occasionally,3
- minutes.Pour into pan;sprinkle with almonds and sugar mix.Bake approx. 40 minutes or until
- golden brown.Cool 10-15 minutes.Remove from pan;cool completely.
